Focused largely on seafood, dinner will feature arroz con mariscos (seafood rice) and fish escabeche, as well as unique accompaniments, such as fried cassava with Huancaína (spicy cheese) sauce, Andean grain solterito (salad) and causa (a cold layered potato dish), among other dishes.As you explore the best of this culture's cuisine, learn about the traditional flavours and cooking styles from Chef Guillermo.
