Roux Scholar and long-term protégée of Simon Rogan, Tom’s dishes are naturally in season, with local ingredients taking centre stage. Working hand in hand with Rogan’s regenerative farm in the Cartmel Valley, Skof will showcase responsibly produced ingredients that are produced by chefs, for chefs. In his new venture, Tom aims to remove some of the seriousness associated with tasting menu restaurants by bringing an element of surprise and joy to his guests.
