Uncork Ontario Winter Wine Tour Saturday, February 25, 2017 Join us for the ultimate winter wine tour as we explore the Niagara Escarpment, a VQA sub-appellation and one of Canada’s first UNESCO World Biosphere Reserves. Michael Fagan, a former columnist for the LCBO’s Food & Drink magazine, will be your expert tour guide as we wine and dine at some of the most renowned wineries in the Niagara. We'll sample and discuss the prestigious sparkling and apéritif wines of Cave Spring Cellars with their Winemaker, Gabriel Demarco. He'll guide us through a tasting of their premium Estate Bottled wines, and prestigious CSV-labelled wines made in small allotments, using the finest fruit from Cave Spring Vineyard’s oldest vines. At Redstone Winery, we'll enjoy a three-course lunch with wine pairings at their recently opened and locally-inspired restaurant. Named for its red clay soil and large stones, Redstone Winery is the latest venture by Moray Tawse. Nearby, Tawse Winery will guide us through a curated tasting of their famed Burgundian-inspired cool climate wines. We'll sample some of the finest Chardonnays and Pinot Noirs of their portfolio. Vineland Estates Winery's sommelier will give us an in-depth lesson on Icewine production. We’ll taste their award-winning Icewines and enjoy a variety of cheese, charcuterie and desserts.
