Zucchini mandala filled with roasted fennel pesto, zucchini flower stuffed with sundried tomato cheese, shaved fennel, heirloom tomato seeds.

Beetroot cooked in shitake & kombu stock topped with horseradish & matcha cream, shaved watermelon radish, beetroot & carrot gel.
ENTREECELERIAC RISOTTO
Smoked barley risotto cooked in celeriac juice topped with baked celeriac root, celery hairs and fried sage leaves.
